Lemon Coriander Soup

1 tsp oil 1 tsp garlic 1 tsp ginger 1 green chilli, finely chopped 2 tsp coriander stem, chopped 1 tsp fresh lemon grass (optional) 1/2 cup cabbage, chopped 1/2 cup corns 1/2 cup carrot, chopped 1/2 cup capsicum, chopped 1/2 cup French beans, chopped 2 tsp ragi + 4 tsp water ( to make slurry ) 1 ltr hot water Salt & pepper ( to taste) 1/4 cup diced paneer 2-3 tsp lemon juice Handful of fresh coriander leaves

Step 1

All of the vegetables were coarsely chopped and set aside.

In a pan, add oil, ginger, garlic, green chilli and coriander stems. Cook for a couple of minutes.

All of the vegetables are now added, saute for two minutes, and then boiled for three to four minutes with lemon grass added.

Once again, cook for one or two minutes after adding the spice and ragi slurry.

Once the gas is off, add the paneer, lemon juice and a generous amount of coriander leaves.

Serve hot in soup bowl and enjoy with soup spoon.
