Strawberry Pie Recipe with Cream Cheese

1 ½ cups graham cracker crumbs ¼ cup granulated sugar ½ cup unsalted butter, melted 8 ounces cream cheese, softened ½ cup powdered sugar 1 teaspoon vanilla extract 1 ½ cups heavy cream 2 cups fresh strawberries, hulled and sliced Additional strawberries for garnish (optional) Whipped cream for garnish (optional)


Prepare the crust:

In a medium bowl, combine graham cracker crumbs and granulated sugar. Add melted butter and mix until the crumbs are evenly coated.

Press the mixture onto the bottom and sides of a 9-inch pie dish. Refrigerate the crust for at least 30 minutes to set.

In a large bowl, beat the softened cream cheese until smooth and creamy. Add powdered sugar and vanilla extract, and continue to beat until well combined.

Make the cream cheese filling:

In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until thoroughly combined.

Take the chilled crust out of the refrigerator. Spread a thin layer of the cream cheese filling onto the crust.

Assemble the pie:

Arrange the sliced strawberries on top of the cream cheese layer.

Pour the remaining cream cheese filling over the strawberries, spreading it evenly.

Chill and serve:

Cover the pie with plastic wrap and refrigerate for at least 4 hours, or overnight if possible.
