Easy Broccoli Cheese Soup

1/4 cup butter 1/4 cup flour 1/2 medium onion (small dice) 1/2 lbs broccoli 1 cup carrot (julien) 2 cups half and half 2 cups chicken stock 8 oz medium Cheddar (grated) 1/4 tsp nutmeg to taste Salt to taste pepper


Step 1

If you bought a fresh head of broccoli, be sure to cut of the florets and remove the massive stalk.


Step 2

Now take a saucepan, put it on medium flame and melt the butter in it.


Step 3

Add onion and cook until soft. Add the flour and cook out for a few minutes until golden.


Step 4

Add the chicken stock and the half and half. Stir to combine them well.


Step 5

Add broccoli and carrots. Simmer for about 20 minutes on low. add Salt and pepper as per taste.


Step 6

Blend 1-2 cups depending on your desired consistency. return that to the pan.


Step 7

Add the cheese a bit at a time, constantly stirring to melt all the cheese.


Step 8

Add the nutmeg and mix well Serve in soup bowl and enjoy with soup spoon.
