2 tbsp. olive oil 3 vegan eggs, scrambled 1 jalapeno, chopped (if you wish you can use habanero) 1 chopped fresh organic tomato 1/3 black beans or kidney beans 1 tbsp. organic salsa 1 tsp. turmeric (optional)

Preheat oven to 350 and prepare 9 x 9 dish.

Pour olive oil, eggs, jalapenos, tomato, beans, salsa, and turmeric into dish and stir well.

Cook, uncovered, 20-25 minutes, serves 4.

Undercooked eggs can be harmful to your health we strongly advise you not to serve or consume eggs that are, or that you suspect are, uncooked.

Additional cooking time will not hurt the other ingredients so if you must add time it's ok.
