baked candied sweet potatoes with marshmallows

6 sweet potatoes 1 cup dark brown sugar, packed 1/4 cup butter 1/4 cup pure maple syrup 1/2 teaspoon salt 1/4 teaspoon ground cinnamon 1/4 cup spiced rum 2 cups mini marshmallows

INGREDIENTS

In a medium saucepan, combine the brown sugar, butter, maple syrup, salt, and cinnamon.

Bring the mixture to a boil, then reduce the heat to low and simmer for 8 minutes, stirring occasionally, until the sauce thickens. 

 Remove from the heat and stir in the spiced rum.

Cut the sweet potatoes into bite-sized pieces and add them to the baking dish. 

Pour the sauce over the sweet potatoes and stir until coated. 

Bake for 1 1/2 hours, stirring every half hour until the syrup thickens. 

Remove the baking dish from the oven and top the sweet potatoes with mini marshmallows. 

Broil for several minutes until the marshmallows are golden brown and toasted. 

Let the dish cool for 10 minutes before serving. Enjoy!
