Strawberry cake | Strawberry Vanilla Cream Cake

This strawberry dessert really blew my mind. After years of lousy homemade strawberry cakes, my expectations were quite low. It was time to put my hard work to the test. The first pastel-pink forkful was the moment of truth.

Ingredients

Crust

200g of raw coconut flakes
2 tbsp of goji berries
2 handfuls of pitted soft dates
2 tbsp of raw coconut flour



Vanilla Cream

Flesh of 2 fresh young coconuts, mature can do too but it won’t be as smooth
3 handfuls of fresh light brown dates (for the cream to remain white)
Juice of 2 lemons
1 tbsp of psyllium husk
1/2 tbsp of ground vanilla bean
Water of coconut milk if needed

Strawberry Coulis

2 handfuls of fresh strawberries
1 handful of dates
1/6 tsp ground vanilla bean

Prep time: 30 mins, 3 hours to set
Serves: 4- 8 persons



How to make Strawberry cake – Preparation

Crust

Place the coconut in the food processor and grind until fine, add the rest of the ingredients and continue grinding until you get a dough consistency.

Place a baking paper at the bottom of a round cake mould, place the dough in and press it down until the surface is even.

Vanilla Cream

Place all ingredients in the blender and blend till real smooth and creamy.

Strawberry Coulis

Place all ingredients in the blender and blend till real smooth and creamy.



Assembly

Assemble layers as shown in the photo incorporating freshly sliced strawberries.

Place the cake while in the cake mould in the freezer for 3 hours, then it’s ready to take out and enjoy!

Tip

If you want to make this cake even lower in fat, you can add to the vanilla cream 2-3 chopped frozen bananas. Keep in mind this will make the cream more runny so you need to handle the cake with more care.
