Ingredients:

2 banana peppers with seeds removed
1 cup cherry tomatoes
1 sliced onion
1 cup chopped cilantro
1 Tbsp. olive oil
2 cans crushed tomatoes with juices
4 garlic cloves
1 Tbsp. lime juice
½ tsp. cumin
Salt and pepper to taste

Directions:

Preheat the oven to 400 °F.

Cut the cherry tomatoes in half.

Coat a baking sheet with the olive oil and top with the tomatoes and banana peppers.

Roast for about 15 minutes. They will look burned, but roasting brings out the flavors.

Let the tomatoes and peppers cool.

Place the crushed tomatoes, garlic, spices, lime juices, roasted tomatoes, and peppers in a food processor. Pulse to blend the ingredients until you get a chunky consistency.
