2 cups almond flour

1/2 cup unsalted butter, melted

3 (8-ounce) packages cream cheese, softened

3/4 cup granulated sweetener (e.g., erythritol or stevia)

3 large eggs

1 teaspoon vanilla extract

Instructions:

Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan or line it with parchment paper.

In a mixing bowl, combine the almond flour and melted butter until well combined. Press the mixture into the bottom of the prepared pan to form the crust.

In a separate bowl, beat the cream cheese and granulated sweetener together until smooth and creamy. You can use an electric mixer or whisk by hand.

Add the eggs, one at a time, to the cream cheese mixture, beating well after each addition. Stir in the vanilla extract until fully incorporated.

Pour the cheesecake batter over the crust in the prepared pan. Smooth out the top with a spatula.
